- Bacon: 6 slices, cooked and diced into small pieces

Step-by-Step Instructions

- Fill the Biscuits: On 8 circles, layer scrambled eggs, bacon pieces, and cheese quarters.
- Seal the Biscuits: Top each filled circle with remaining dough circles, pinching edges firmly to seal.
- Air Fry: Cook at 370°F (187°C) for 8 minutes until golden brown.
- Rest and Serve: Let biscuits cool in the air fryer for 2 minutes before serving.
Make-Ahead Tips
Want to save time in the morning? You can prep these yummy biscuits the night before! Mix and cut your dough circles, then stack them between wax paper sheets in the fridge. Cook your eggs and bacon ahead too – just warm them up a bit before stuffing the biscuits. When you’re ready to cook, just assemble and pop them in your air fryer. Fresh, hot breakfast in minutes!
Mix-and-Match Fillings
These stuffed biscuits are super flexible! Try swapping the American cheese for cheddar, pepper jack, or Swiss. Not a bacon fan? Use breakfast sausage or ham instead. You can also add some quick-cooked veggies like spinach, peppers, or mushrooms to bump up the nutrients. Just remember not to overfill – about 2-3 tablespoons of filling total works best.
Storage and Reheating
Made too many? Lucky you! These biscuits stay good in the fridge for up to 3 days in an airtight container. To reheat, pop them back in the air fryer at 350°F for 2-3 minutes. They’ll come out almost as good as fresh! You can also freeze them for up to 2 months – just wrap each one in foil first. Reheat frozen biscuits at 350°F for 5-6 minutes.
Quick Tips for Perfect Results
Keep your ingredients cold – this makes the biscuits extra flaky! When sealing the edges, press firmly with a fork to prevent leaks. Don’t skip the 2-minute rest time after cooking – this helps the cheese set up nicely. If your biscuits are browning too fast, just lay a small piece of foil on top during cooking.
Air Fryer Egg And Bacon Stuffed Biscuits
Equipment
- Air Fryer
- Round Cutter or Large Mouth Mason Jar
- Large Bowl
- Pastry Cutter
Ingredients
For the Biscuits
- 2 cups self raising flour
- 4 tbsp butter cold, cut into pats
- 2/3 cup milk or buttermilk plus more if needed
For the Filling
- 4 eggs scrambled
- 6 slices bacon cooked, diced
- 2 slices American cheese quartered
Instructions
- Add to your large bowl your flour, and butter (pro tip: shred your butter with a cheese grater. This allows the butter to incorporate into the flour better.). Using a pastry cutter, or your hands, work the butter into the flour until they resemble crumbs the size of large sized peas.
- Slowly add 2/3 cup of milk and continue to mix until your mixture holds together. Add more (up to 3/4 cup) if your mixture needs more liquid in order to hold together.
- Transfer your ball of biscuit dough to a lightly floured flat surface.
- Using a round cutter (I love to also use a large mouth mason jar!), Cut 16 round circles.
- To eight of your circles, evenly distribute your scrambled eggs, and bacon pieces. Top your eggs and bacon with a slice of cheese.
- Add another biscuit circle on top of the cheese and pinch together to secure the sides of your biscuits.
- Cook for 8 minutes at 370ºF or 187ºC degrees.
- Cool in the air fryer for 2 minutes after done cooking. Serve and enjoy!
