Ingredients List

Ingredients List
  • Potatoes: 3 whole, cut into uniform strips for even cooking
  • Chicken Breast: 1/2 lb, diced into bite-sized cubes for quick cooking
  • Olive Oil: 4 tablespoons, divided for coating ingredients
  • Seasonings Mix: Perfect blend of salt, dried herbs, paprika, granulated onion, garlic, and coriander (1/2 teaspoon each)

Step-by-Step Instructions

  1. Season Potatoes: Toss potato strips with half the seasonings and 2 tablespoons olive oil until well coated
  2. Initial Potato Cooking: Arrange in air fryer basket and cook at 400ºF for 10 minutes
  3. Prepare Chicken: While potatoes cook, combine diced chicken with remaining seasonings and olive oil
  4. Combined Cooking: Push potatoes to one side, add chicken, and cook together at 400ºF for 12 minutes
  5. Final Touches: If needed, flip ingredients and cook additional 3 minutes for perfect browning
  6. Temperature Check: Ensure chicken reaches 165°F internal temperature before serving

Cooking Techniques

Air frying gives this chicken and potato combo a wonderful crispy texture without using much oil. The key to success is not overcrowding your air fryer basket – a single layer works best! When you’re arranging the food, make sure there’s a bit of space between pieces so the hot air can flow around them. If you notice the food browning too quickly, you can lower the temperature by 25 degrees and add a minute or two to the cooking time.

Variations & Substitutions

Want to switch things up? Try sweet potatoes instead of regular ones for a different flavor and extra nutrients. You can also use chicken thighs – they stay even juicier than breast meat! The herb mix is super flexible too – rosemary, Italian seasoning, or even taco seasoning would taste great. If you’re watching your oil intake, you can spray the ingredients with cooking spray instead of using olive oil. Just remember that some oil helps everything get nice and crispy!

Serving Suggestions

This dish loves a good dipping sauce! Ranch dressing, honey mustard, or BBQ sauce work great with both the chicken and potatoes. Add a simple side salad or some steamed broccoli for a complete meal. Want to make it more filling? Serve it over a bed of rice or with warm pita bread. A sprinkle of fresh parsley or chives on top adds a nice pop of color and fresh flavor!

Storage Tips

Keep any leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them back in the air fryer for 3-4 minutes at 350°F – this brings back that lovely crispy texture! You can also meal prep this recipe by cutting the potatoes and chicken ahead of time and storing them separately with their seasonings ready to go. Just remember not to add the oil until you’re ready to cook.

Equipment

  • Air Fryer

Ingredients

  • 3 potatoes cut into strips
  • 1/2 lb chicken breast diced into bite size cubes
  • 1/2 tsp salt
  • 1/2 tsp dried herbs any type, try sage, thyme, or oregano
  • 1/2 tsp paprika
  • 1/2 tsp granulated onion
  • 1/2 tsp granulated garlic
  • 1/2 tsp ground coriander
  • 4 tbsp olive oil

Instructions

  • Put the chopped potatoes in a bowl, add half of the herbs, spices and salt, as well as 2 tablespoons of olive oil. Mix well to coat.
  • Transfer the potatoes to the air fryer basket in a single layer. Some overlapping is ok. Air Fry for 10 minutes at 400ºF/200ºC.
  • While the potatoes cook, transfer the diced chicken to a bowl, add salt, the remaining seasonings, and remaining olive oil. Mix everything thoroughly.
  • Move the fried potatoes to the side of the air fryer basket so that they occupy only half of the grate. Put the chicken on the other half of the basket. Air fry the chicken and potatoes together for another 12 minutes at 400ºF/200ºC.
  • After 12 minutes, if the chicken and potatoes are not browned enough, turn them over and cook for another 3 minutes at 400ºF/200ºC.
  • Check to be sure that the chicken is fully cooked, to an internal temperature of 165°F/74°C, and serve immediately with dipping sauces and side dishes if desired.
