Air Fryer Fried Green Tomatoes

A healthier version of classic Southern fried green tomatoes made in the air fryer

Main Ingredients
- 2 large green tomatoes sliced into 1/4 inch thick slices
- 3/4 cup panko crumbs use GF if needed
- 3/4 cup cornmeal
- 2 eggs sub maple syrup if egg-free
Wash and dry the green tomatoes. You will want to start with the tomatoes sliced and place them on paper towels. I like to season with salt and pepper.
Prepare a bowl of panko or bread crumbs and a bowl of whisked eggs. Dip the sliced tomatoes into the beaten eggs and then into the panko and cornmeal mixture. Be sure to cover both sides.
Place tomatoes into the air fryer basket. I would suggest spraying with a spray oil to help the panko crumbs crisp up.
Cook until golden on both sides at 400F/204C for 12 minutes.
Plate up your crispy tomatoes. I like to serve mine with a dipping sauce too!
